Responsibilities
Obtain an understanding of the USDA beef grading standards and recognize how to work with graders in order to achieve optimum grade application
Apply Tyson selection and discounting specifications for processing
Work with production management to achieve ideal inventory levels, maintain maximum efficiency in carcass selection and monitor all vital areas of the sales coolers
Check refrigeration, spacing, ribbing, and lighting in all grading areas and report discrepancies to the sales manager and production management
Explore different divisions and departments while learning the various aspects of the meat processing industry
Qualification
Required
Must be in good standing; entering Junior or Senior year, required with at least one semester remaining
Strong written and verbal communication skills are required
Evaluation of beef carcass quality attributes will require good visual acuity and capacity for rapid decision making
Must be able and willing to work on rotating shifts in cold environment with long periods of standing
Must include a resume to be considered
Candidates considering further education after degree completion must highlight this on their resume to ensure full consideration
Preferred
Degrees in Agricultural, Animal, or Meat Science, or other related fields, preferred
Some Meat evaluation experience is preferred
Knowledge of MS Office applications (Word and Excel) is preferred
