Laboratory Technician

North Dakota Mill is seeking a detail-oriented and motivated Lab Technician / Baker to support daily laboratory operations and perform occasional test baking for quality assurance. This role plays a critical part in maintaining product quality through analytical testing, grain grading, microbiology support, and baking evaluations.

Responsibilities

Perform grain grading and related quality assessments
Conduct physical testing including protein, moisture, and ash analysis
Assist with microbiology techniques, including preparation of media and solutions
Accurately record and enter test results into computer systems
Operate, clean, and properly maintain laboratory instruments and equipment
Occasionally perform test baking (bread, Kaiser rolls, tortillas, and other baked goods) to support quality assurance
Follow laboratory, food safety, and plant safety procedures
Assist and support other laboratory technicians with daily operations and special projects
Work both independently and collaboratively as part of the lab team
Participate in weekend rotation, overtime, and shift coverage as needed
Other duties as assigned

Required

Basic understanding of math, chemistry, and biology principles
Proficiency with Windows-based computer systems and data entry
Strong organizational skills with the ability to manage multiple tests and tasks
Ability to follow procedures with precision and attention to detail
Understanding of laboratory, food safety, and plant safety practices
Ability to lift 50 pounds
Ability to stand for up to 8 hours per shift

Preferred

Experience in a laboratory and/or commercial baking environment
Associate degree in a technical or scientific field
Minimum of one (1) year of experience in a laboratory or baking industry environment
